Cheesy Broccoli and Carrot Cassereole





2 cups small fresh broccoli florets
1 cup sliced carrots
1/2 cup sour cream
1/4 cup milk
1 1/2 cups shredded Cheddar cheese
1/2 cup french fried onions

Heat oven to 350 degrees
In ungreased 1 quart microwavable casserole, mix broccoli, carrots and 1/2 cup water. Cover with plastic wrap and microwave on high 4-6 minutes, stirring every 2 minutes, until veggies are tender; Drain.

Stir in sour cream, milk and cheese until well mixed. Sprinkle with onions.

Bake uncovered for 15-20 minutes or until bubbly and veggies are tender.

Short Ribs in Red Wine




2 tbs olive oil
3lbs bone in beef short ribs
pinch of slat
couple twists of pepper
1 can of diced tomatoes
1 med. chopped onion
2 tbs. tomato paste
1/2 cup beef broth
1/2 cup red wine
1 tbs. Worcestershire sauce
1/4 cup water
2 tbs cornstarch

In big skillet, brown ribs in olive oil and sprinkle with salt and pepper. Shold take around 4-6 minutes.

In slow cooker, place tomatoes, onion, and paset. Stir. Add ribs, wine, broth, and worcestershire sauce.

Cover and cook on low for 7-9 hours.

Remove ribs and bones from cooker and cover them. Spoon off the fat from the top. In a small bowl, mix water and corn starch. Stir into mixture. Turn cooker on high. cover and cook for 10-15 minutes or until sauce has thickened. Serve over ribs.

Optional: Serve Ribs over mashed potatoes or egg noodles.

Monkey Bread







3 Cans Buttermilk Biscuits (The non-flaky kind)
1/2 cup brown sugar
1 cup sugar
2-3 tsp. cinnamon
2 sticks of butter

Pre heat oven to 350 degrees. No need to grease the pan.
Combine the 1 cup of regular sugar with 2-3 teaspoons of cinnamon. I use 3 teaspoons of cinnamon and this gives it a fairly strong cinnamon flavor.
Dump these into a 1 gallon zip bag and shake to mix evenly.
Drop all of the biscuit quarters into the cinnamon-sugar mix. .
Once all the biscuit quarters are in the bag, seal it and give it a vigorous shake. This will get all those pieces unstuck from one another and nicely coated with the cinnamon-sugar. You might have some excess sugar left over and that’s okay.
Spread these nuggets out evenly in your bundt pan.
melt those two sticks of butter together with 1/2cup of brown sugar. This can be light or dark brown sugar.
Stir together over a medium-high heat until the two become one.
Once the brown sugar butter has become one color, you can pour it over the biscuits.
Bake this @ 350 degrees for about 30-40 minutes until the crust is a deep brown on top.
allow this to cool for about 15-30 minutes before turning it over onto a plate. If it doesn’t slide right down onto the plate, give it a few love-taps until it plops. It’ll hold.
